As a part of our Food Week for Black History Month, here is a recipe for Nigerian Owo Soup, submitted by Osere Joydaniels A.
Ingredients:
You will need the following...
Dried tilapia fish
Dried beef
Roasted Kpomo
Native palm oil
Grounded Cray fish
Native white salt
Potash (akawun)
Seasoning cubes (naija pot Maggi)
Dried edible starch
Pepper
Salt
Water
Method:
Place cooking pot on fire with the quantity of water youu want which determines the quantity of soup.
Wash your meat and fish in the pot and add your seasoning cubes and salt and cook until desired softness.
Soak your yellow garri and a small quantity of starch in water until it's risen.
Pound your potash and native salt (a table spoon each), in a cup of water.
Add grinded crayfish and pepper 🌶️ and dried fish into the now boiling pot and continue to boil for a few minutes.
Add 3 tablespoons of palm oil in a small bowl and gradually pour in the potash water and stir quickly until the mixture turns yellow and then add to the boiling pot.
Add soaked yellow garri and starch mixture gradually and keep stirring to avoid lumps.
Continue to stir so it doesn't run over until it is thick, allow for about 5 more mins and your Owo soup is ready.
Allow to cool for about 10 to 15 mins and serve with desired swallow e.g eba or starch or you can even eat it with boiled yam.
