BHM Food Week: Nigerian Gizzdodo

As a part of our Food Week for Black History Month, here is a recipe for Nigerian Gizzdodo, submitted by Rukeme Agbamu.

If you have ever had Gizzdodo at a party, chances are you would like to try it again, or maybe even learn to make it yourself. It is quite easy to make, I'll show you how.
 
Gizzdodo is a stir fry dish made by a combination of fried ripe plantains with fried diced gizzards in a pepper and tomato sauce. It is served as a meal on its own, as an appetizer for a party or as a side dish with your jollof rice.The name Gizzdodo is a combination of ‘’gizz’’ from gizzard and ‘’dodo’’ which is the Nigerian local name for fried ripe plantains.

Ingredients:

To make Gizzdodo you will need:

  • gizzards (either chicken or turkey will do)
  • ripe plantains
  • fresh tomatoes
  • onions
  • bell peppers (you could use a combination of red, yellow and green bell peppers)
  • salt
  • seasoning cubes
  • other spices for taste

Method:

  1. Start by chopping up your gizzards into very tiny cubes, pour into a cooking pan with just enough water to cook until soft. Salt and spice to your taste andleave to cook. Cut up your plantains into dices of similar size to your gizzards, fry in a pan with a little cooking oil until it turns golden brown, then sieve and put to one side.
  2. See that your gizzards are soft and properly cooked, sieve from the stock and leave to the side. You can either fry your gizzards until they are crispy dry or you can mix with the plantains you just boiled.
  3. At this point you have your plantains diced and fried to a golden brown colour on the side, you also have your gizzards cooked on the side, depending on your choice, you could have either fried your gizzards until crispy dry or just boiled. The next and final step will be to make a sauce with your peppers in which your gizzards and plantains will be stir fried in.
  4. To make your sauce, heat some cooking oil in an empty pan, fry your onions and peppers, leave your peppers to fry for a bit, add your blended fresh tomato, if you have any stock left from your gizzard, add and continue stir frying. Add your spices to taste. Add your fried diced plantains and your gizzards and stir fry. Serve with a smile :)

Gizzdodo is generally easy to make, even for beginners in the kitchen. The crunchy and sumptuous taste you get from eating this dish is worth the trouble.
